Cooking in aluminium and its impact has not been researched enough or thoroughly to establish any direct relationship or impact. Pressure cookers and normal cooking vessels like pans and pots have been made in aluminium for over 10 decades Aluminium is is the most commonly used commercial cooking utensil by far. Reputed companies and many arbiters of food science have no clear answer or studies. All we hear from these discussions is just anecdotal evidence and hear-say. Same is true for copper and brass vessels and also stainless steel. Just by seeing turmeric stains on the aluminium vessel does not mean it is harmful for health. Even the normal fresh food and fruits contain aluminium from the soil absorption. Levels of aluminium in the body vary and some data seems to indicate that poor functioning kidneys are not able to excrete the aluminium effectively. This does not mean that aluminium is bad for the kidney. Same is the case with Alzheimer - brain tissue seems to indicate presence of aluminium - but that does not immediately mean aluminium vessels causes Alzheimer. Bottom line is probably this: not enough data, not clear documentation, too anecdotal and going forward needs a more thorough review and research. In the meanwhile - what can we really do - mix and match the use of metal vessels and use good quality goods. And dont scare people with anecdotal evidence gathered from here and there

The World Health Organization estimates that adults can consume more than 50 milligrams of aluminum daily without harm. During cooking, aluminum dissolves most easily from worn or pitted pots and pans. The longer food is cooked or stored in aluminum, the greater the amount that gets into food.


According to some recent studies, using aluminium cookware can be responsible for polluting our bodies and poses various health hazards as cooking a meal in an aluminium pan can add about 1 to 2 mg of aluminium to your food. Using aluminium cookware for a long time can pose these health risks for your health

Scientists have found increased levels of aluminium in the brain tissues of some patients suffering from Alzheimer's disease, amyotrophic lateral sclerosis and Parkinsonism dementia. But,so far there is insufficient evidence to say that aluminium is a cause.

In addition, people with kidney problems may also have difficulty removing excess aluminium from their bodies because of which it gets accumulated, posing risks for bone and brain disorders.

Acid foods such as fruit and vegetable juices, tomatoes and sauerkraut tend to increase in aluminium content more than other foods, but the extent of this depends on other factors such as cooking temperature, length of contact time and even the amount of sugar present (sugar reduces the amount of aluminium that is dissolved).

How to prevent more absorption of aluminium in body?

You can minimize the amount of aluminium entering your food by avoiding cooking acidic foods such as tomatoes in aluminium cookware. Also, avoid storing leftovers in aluminium dishes or wrapping hot foods in aluminium foils as it allows food to absorb small amounts of aluminium. It is better to stop using old aluminium cookware and switch to better alternatives.

Alternatives For Aluminium Utensils:

Anodized aluminium is considered a good choice as it has a hard coating that reduces the amount of aluminium that can get dissolved in food.

Apart from this clay pot is the one best alternative which we indians used traditionally.

Before getting in to the details of it, answer to "Is it harmful to cook or eat in aluminium utensils?" It is DANGEROUS to use ALUMINIUM.

To support my answer I can give lots of evidence and references but trying to keep it simple. Aluminium as a metal is not good for human body. When we cook or drink in aluminium utensils small quantity of aluminium gets in to our body. But due to its properties aluminium neither gets digested nor gets out of the system as waste.

Human body is a miracle and it understands if foreign particles gets in to the body it handles it, but constant exposure of aluminium to the body leads to many critical illness. Unfortunately the impact is not overnight and after many years if someone shows up cancer symptoms, impact of aluminium is ignored. It is a slow poison.

Same with non-stick cookware. Ditch the Non-Stick (Dangers of Non-Stick Cookware)Teflon is a coating over aluminium and when teflon wears out or a scratch in the cookware, it exposes aluminium during cooking.
