In baking and roasting, foil can be used to wrap or cover food (aluminium wrapping foil) to protect it from direct heat in the oven. It can also be punctured, allowing excess moisture to escape if required.
Is it dangerous to human health to wrap foods in hot seal aluminium foil?
What we know is that when you cook things in aluminium foil or aluminium pans, because aluminium is a very reactive metal, the surface of the metal is covered in a very thin layer of an oxide - aluminium oxide - and this actually protects the metal from the atmosphere. That's why aluminium doesn't rust like iron does: it's fairly well protected by that oxide layer. This protective layer also means that the aluminium can't actually get into the food in any appreciable amount. The exception to this is if you cook very, very acidic foods in your aluminium pot, and a good example of this Rhubarb.
Rhubarb is extremely acidic and if you make a rhubarb crumble in an aluminium foil cooking pan, you will find that it needs virtually no cleaning afterwards because the acid attacks the oxide layer and can liberate a small amount of aluminium from the pan and this can get into the food.

Aluminium foil, also aluminum foil , al-foil, tin foil, is a thin sheet of aluminium that can be used as a wrapping or pliable cover in baking, barbecuing, roasting and as insulation. It is available in rolls of varying widths, lengths, and thicknesses.
When barbecuing foods that would dry out or scorch in direct contact with flame, wrapping in foil helps to retain moisture and flavour. Whole fish may be wrapped in foil with a thin coating of oil on the fish, and a sprinkling of dried herbs and spices, before placing on the barbecue. Whole potatoes can be individually wrapped in foil before tossing into the hot coals, for later retrieval.
Aluminum Foil is available in a variety of widths and thicknesses to accommodate just about any task. Our kitchen foil withstands high heat and extreme cold, making it perfect for everything from grilling to freezer storage.
Aluminum foil is a kitchen essential. If you're like us, you use this workhorse for wrapping up leftovers, packaging food for the freezer, and lining baking sheets and grill grates. It can even be a cooking vessel all on its own, which is especially handy if you're short on pots and pans (or just don't feel like cleaning).
Regular aluminum foil will definitely work for kitchen tasks like covering dishes to be stored in the fridge, wrapping sandwiches and other foods, and lining baking sheets. But regular foil doesn't hold up as well with heavy foods or with high-heat cooking on the grill, where it's more likely to tear, rip, or break.
